Spicy Asian Noodle Salad

Ingredients:
  • 16 oz. angle hair pasta or thin mein noodles
  • 1/2 cup snow peas, strings removed and thinly sliced
  • 3 scallions, thinly sliced
  • 1/2 cup daikon, sliced into matchsticks

Directions:
Boil snow peas for 30 seconds, remove from water (but keep water boiling) and rinse with cold water and drain. Put in large bowl with scallions, daikon, and jalapenos and toss. Set aside this vegetable mix. Cook noodles for approximately 3-4 minutes until just tender. Rinse, drain, and add to bowl with the prepared vegetables. Add fresh ginger and Virginia's Ginger Sesame Dressing. Toss and distribute on salad plates. Sprinkle cilantro and cashews on each salad before serving. Serves 4-6.
